"Salad in the_pines"
number of people it serves depends on their appetites

take and rip up a mixture of iceberg and romaine lettuce (or cut with a plastic blade to avoid browning)
(you may also substitute an equal volume of spinach for some of the lettuce, according to taste)

take
--1/4 c pine nuts
--1/4 c walnut pieces
--1/2 large golden delicious apple, chopped
--1/2 large red delicious apple, chopped
-- 1 large carrot, grated
--1/3 c red cabbage, finely shredded
--1/4 c. sun dried tomato
--1/2 medium red onion, loosely chopped
--2 large red bellpeppers, cut into strips
--black pepper, coarse grind, 2-4 tbsp
--1 and 1/2 tbsp chopped parsley
--1 and 1/2 tbsp chopped basil
(both basil and parsley should be fresh)
--2 cloves minced garlic

take lettuce and/or spinach in large bowl, toss with all other ingredients except the pine nuts and the red bellpepper pieces and black pepper

take the red bellpepper and the garlic and sautee lightly, sprinkling in half of the black pepper and all of the pine-nuts and all of the basil

continue to sautee until pine-nuts appear to show the first signs of being toasted, turn off heat and stir in a small splash of red-wine vinegar and a pich of salt, stirring in the parsley at the end

toss the rest of the black-pepper into the salad and then toss in the red peppers and serve

during the last few weeks i lived in an apartment with the husband and wife team who i simply remember now as the pantera_fans_in_love , in spite of my renewed contributions to the rent, there was never any food left for me other than peanut butter, bread, jam and dr. pepper.

(NOTE: Fruits as specified are not set in stone, add or substitute depending upon season and taste)

(3 versions)

Seven Deadly Sins version

-- 1 ripe mango, peeled, fully separated from pit
-- 1/2 cup strawberries, fresh or frozen
-- 1 amall can pineapple chunks with juice
-- 2 kiwi fruit, peeled
-- banana, peeled
-- 1 & 1/2 c. loosely crushed ice
-- 1 & 1/2 c. (3-5 scoops) vanilla ice-cream
-- 1c. milk,
-- 1 tbsp sugar

combine ingredients in blender and blend at high speed until smooth, add a splash of rum (or not)

Penalty Box version:
Substitute Lowfat vanilla yogurt for Ice Cream and 2% or Skim for milk, sweeten to taste with artificial sweetener or honey (if the pineapple juice isn't enough)

Relatively Guilt Free version:
Substitute vanilla or strawberry soy "ice cream" and soy milk, sweeten to taste with frozen white grape juice concentrate (a teaspoon at a time)

and remember the rum is optional

birdmad THE HONEY MUSTARD RANCH TURKEY MELT FIASCO (a sandwich)

3-4 oz. roasted or smoked turkey breast, carved or sliced

wide (not thick) cut slices of a multi-grain bread

3 slices of swiss or other cheese (more or less and or according to your preference, though cheese is kind of essential to the concept)

1. tbsp roasted red pepper slices*
2 or 3 slices of tomato
1-1/2 tsp ranch dressing*
1/2 tsp honey mustard*

(*more or less, to taste)

take one slice of the bread and lay down one or two of your cheese slices. put the turkey on top followed by the roasted red pepper.

Put the remaining cheese over the top and put in a broiler or toaster oven set on high for about three to six minutes,

On the other slice of the bread, spread the mixture of ranch dressing and honey mustard and then slice your tomatoes and any lettuce or onions you want to slap on the other slice and then put it together and enjoy

1 tbsp ground ginger (fresh)

2 tsp red chili flakes
dash of cumin
3 tbsp molasses

you do the math, serve over steamed or saffron rice

1 5-6 oz (100-200g) pkg flatbread crackers
(approx 30 ct)

2. 8oz. (220g) pkg whipped cream cheese

1/2 cup roasted red bell pepper, finely chopped

minced garlic (to taste)
chopped parsley (to taste)
3/4 tsp lemon juice
1 tsp coarse black pepper
1/2 tsp paprika
3 small green onions, chopped fine and including the green

1/2 head red romaine lettuce or appropriate amount of radicchio

60 parsley sprigs (you should just be able to get that many small sprigs from

some reasonable quanity of smoked salmon to be divided into roughly 60 pieces

split crackers into squares, set aside


combine seasonings, onion, garlic and red bell pepper into cream cheese,

mix thoroughly

allow to sit covered @ room temp for approx 15 mins before placing container back in refrigerator for approx 1/2 hour

divide lettuce and salmon portions evenly

remove cream cheese mixture from refrigerator, work with wooden spoon until easily spreadable again

lay lettuce leaves on crackers and then apply cream cheese mixture.

crown mixture with smoked salmon piece and parsley sprig, arrange on platter

makes 60 pieces, good for a decent sized party appetizer tray
