sirflaccid There is a genetic flaw in my family. Everyone believes that macaroni and cheese, or mac-n-chesse as it referred to, is a required side at every meal. Sadly, this carried on to my mother.

I understood its utility when times got hard, but damn. For some reason, I began to resent the very existence of mac-n-cheese.

Since leaving the nest, I can count the number of times I've entertained the thought of eating mac-n-cheese on one hand.

i made real mac and cheese once. definitely tastier than the boxed version. but definitely more work and more money....probably why i haven't bothered since.

birdmad mexican style:

--1 pkg of shell pasta equivalent in size to macaroni box.
--equivalent volume of butter or margarine as called for on Mac and Cheese box plus a half-measure
--equal measure of WHOLE milk or half measure of cream

2 tsp minced garlic
2 cubes chicken bouillon
1 small can of tomato paste
dash of salt,
dash of mild red chili powder
black pepper to taste
4 oz grated colby cheese
4 oz grated Monterey Jack


boil water, add pasta. drain MOST of the water (90 percent roughly) and add bouillon cubes or powdered version, add tomato paste, garlic, salt and pepper. Add milk/cream, butter and cheese

simmer for an extra 2 minutes and serve...goes best as a side with tacos

experiment with ingredient ratios in case i fucked anything up

Ouroboros Ouroboros' Father's "Don't Tell My Fiancee Macaroni and Cheese"**

1 lb. tube pasta ½ cup flour
6.5 tablespoons butter salt
1 quart half and half room temp. pepper
1 cup milk room temp 2-3 pinches cayenne
2 cups extra sharp cheddar 1/2 teaspoon garlic powder
2 cups sharp cheddar ¼ teaspoon nutmeg
2 cups swiss cheese breadcrumbs
1 1/4 cups romano cheese

Pre-heat oven to 325
Grease a 13 by something casserole dish with a little butter

Boil water, add salt to it, and cook pasta till al dente. While the pasta is cooking, shred the cheese:

For sauce: Shred and combine in a bowl:
2 cups sharp, 1 cup extra sharp, 1 cup swiss, 1 cup romano

For topping: Shred and combine in a bowl: 1 cup extra sharp, 1 cup swiss, ¼ romano

By now, the pasta is almost done. Drain it, cool down with water and then put a bit of olive oil on it to coat, so it doesn’t clump together. Set to the side

Melt 6 tablespoons butter in a pot over medium heat. (Have the flour ready)
Whisk in ½ cup flour and keep whisking for 1 minute.
Whisk in 1 cup of the milk and 4 cups of the half and half

Add: 1.5 teaspoons salt
½ teaspoon pepper
2-3 pinches cayenne
½ teaspoon garlic powder
1/4 teaspoon nutmeg

Keep whisking until mixture thickens and starts to bubble.

Dump in cheese sauce mixture and take pot off of heat.

Dump in pasta and stir around
Pour it into casserole.
Top with cheese topping
Sprinkle with breadcrumbs
Bake 30 minutes
Put under broiler for 30 seconds to brown the top
Serve.

unhinged ps. i used skim milk in my homemade mac and cheese and it still tasted good. with all that cheese in there, you don't really need whole milk or half and half. but, it's probably creamier with more fat. i guess.

i added a red bell pepper and some green onion in mine and that was tasty.
