unhinged simple ingredient list, intricate forming process. eastern/central european baked good.

not sure if it's spelled right; like most of the traditions in my mom's family, spelling is a problem. damn cyrillic alphabet.

dough of flour, cream cheese (sour cream?) and butter. nothing else. mix really well til completely blended and chill. choose several cans of pie filling; when me and my mom make them for christmas we use almond and raspberry and sometimes she makes sweet cream cheese filling. traditionally it's just fruit though. also cherry, pineapple, apricot. roll out dough and cut into squares. make a sparing line of filling on the diagonal (otherwise they pop open when they're baking and don't look as good) then fold over flaps and seal with a dab of water to ensure they don't pop open when baking. cool on rack and dust with powdered sugar (definitely necessary since there's no sugar in the dough; if you don't wait til they cool the powdered sugar gets all clumpy. not necessarily bad in my opinion, but these cookies are just as much about looking good as tasting good)

i hate making them, but i sure love eating them. i always put too much filling and they pop open. but eating the almond ones hot out of the oven is definitely the perk of being the baker.
