To put salad recipes. When feeding_the_poor_with_dandelion_leaves becomes about people, not about food, one needs a dedicated salad page (one thinks). Without further ado: PRETEND IT'S SPRING SALAD For 4 servings you will need: -A boring but dependable light-coloured lettuce, such as Romaine -Two small oranges, tangerines, or the like; small so that you can peel them and break them into sections yourself -One red pepper, sliced into thin but not finicky-thin strips -A handful of golden raisins -Half a lemon for juice -Pepper (This came together somewhat randomly. I was trying to find the red peppers when a container of golden raisins slid out of the fridge, prompting me to throw some in. The springlike feel, though, depends on not overdoing it with the dressing. When I first made it, I put in some red wine vinegar, but this made it taste too heavy, so in the future I'll leave it out. Lemon juice and pepper are enough.)

BREAD SALMON SALAD This was something that I put together from random leftovers, and it tastes surprisingly good. The breadcrumbs were mainly crusts, left over from something my mother made which called for a whole-wheat loaf without crusts. The celeriac was pre-sliced and in a jar. For a good veggie version you can replace the salmon with mashed kidney beans. It won't have the same taste, but it will have a similar texture and colour. The salad, when mixed, is a pleasing peach-pink (well, except for the olives). -Bread crumbs -Canned (or otherwise mashed) salmon -Sliced celeriac -Cubed beets -Sliced black olives Mix everything together! If vegetables haven't already been marinated in something, add a little salt and vinegar.

Beware the angry salad! Or the... YELLOW-ORANGE SALAD I got the idea for this one because of leftovers: shredded carrots, chopped onions, and two egg yolks. It's delicious. If you eat it with a peanut butter and citrus jam sandwich, you'll be eating what I had for lunch - and that will make you almost famous! Okay. -Two egg yolks -A handful of shredded carrots (about half a carrot) -A quarter of an onion, chopped -Three or four dandelion heads Topping: -Fruit and vegetable chutney, or homemade ketchup, if you have some -Black pepper -Curry Cut the green parts off the dandelion flowers. Mix everything except the pepper and curry. Fry the egg yolks with a bit of oil, like you're making scrambled eggs, until they're no longer runny but not dry. Enjoy the yellow-orangeyness!

Correction: the grated "carrot" I had was actually grated sweet potato. I remember it looked a little soft in the container, so I ate some to see if it was all right. Since it tasted fine, I didn't question it's carrotness. So, sweet potato. Ah, what the heck, I'm sure carrots would work fine too.

LAZY QUIRKY SALAD -chopped mushrooms -chopped cucumber -pineapple pieces (these came in a can) -a spoonful of mayonnaise Random leftover things, but it tastes surprisingly good. (Caveat: I'm eating supper at 11 PM. Almost anything would taste good.)

EVERYTHING BUT THE KITCHEN SINK SALAD I made this near the kitchen sink, but it didn't include the kitchen sink. It took a long time, but it tastes good. I'm having some now and keeping the rest for lunch tomorrow. Non-sauce: 4 florets broccoli, sliced smaller 2 tomatoes, thinly sliced 1 carrot, sliced 1 celery stick, sliced Half a green pepper, sliced Slice of ginger root, sliced into little bits Slice of lemon, sliced into little bits 8-10 unsalted roasted pistachios, sliced Sauce: peanut butter olive oil sunflower oil honey cumin celery seed (The sauce is mostly peanut butter, and a bit of the other things. The peanut butter has no additives, so it isn't already sweet or salty.)

Bruschetta -3 or 4 tomatoes -a quarter onion, chopped fine -a bunch of parsley -a slice of lemon, chopped from the centre to the edge so that bits of the peel are in each piece; another lemon slice can be squeezed for more flavour -a small handful of mint leaves, or as much as you have the patience to wash and remove, chopped fine (this takes patience but it's good; tomatoes, parsley, and mint were in my garden; I also added some green pepper on one occasion and some radish plant pods on another)

But maybe it was my forbidden-in-January sucrose: the cranberries had sugar added. Sometimes I'm lazy and I use the dressings already in the fridge, but it's fun to add a little spice to them, like so: ~Crunchy, with Mustard~ Finely chopped cabbage (little cubes) Finely chopped green pepper (little cubes) Chopped parsley (it's already fine, finally) Proportions: I made the amount of pepper about 3/4 that of the cabbage, and the amount of parsley about 1/5 of it. Dressing: Creamy cucumber dressing Mustard (let's say about half a teaspoon for three servings? didn't measure exactly) A sprinkle of curry powder
