i was in whole foods, the grocery store this evening, and saw these mushrooms available for sale. i asked beth, -who had been with us, for we had celebrated our birthdays a bit earlier that night at a cafe called casbah, in the east end of pittsburgh,- if she knew anything about them. "they're used in chinese cooking," she told me. the package said they were grown in virginia. and then for the next 15 minutes or so we told stories about mushroom hunting, tripping, and the faeries that live under them.

oh they are so yummy i'd cooked and eaten them fresh before many times,.. but then i tried the dried shiitake, and i noticed a different effect, more relaxing, felt warm and tingly all over, chi moving... I knew they were supposed to be good for you, but I was only cooking them for, well, something to eat! So, after feeling tingly, I was reading up on them and apparently they are super-good, more than i thought! Obviously something in them interacted well with me because they made me feel a bit better. I want to eat them every day now. I've been eating them for three days in a row hahaha

i was eating them for a while bought a whole bunch but people got fed up with the smell of them cooking so i haven't cooked them in a long time i found them to be quite nice in spaghetti

and people liked the taste they said especially in the pasta when i let the sauce sit and simmer for a while but one said they reminded them of some octopus they ate one time and others said they looked like worms when i sliced them thin and stirfried them for a sandwhich filler. i've never eaten octopus, so i don't relate them to that at all... or worms for that matter. i just smell and taste shiitake mushrooms.

(note: spices are added after mushrooms are done being stirfried, and the water has all been absorbed or steamed off. if no mushrooms, or even with mushrooms, i might use textured soy protein and cook that by crisping and steaming to rehydrate. or if not, just add the spices right after the garlic, onion, and celery are done, then proceed straight to the tomatoes.)
