raze i used to want to shave everything right down to the bone. pare away all the unnecessary details. but you can't live on skeletal tissue forever. and without a bit of fat to lubricate the muscle fibers in the meat, there would be no tenderness. my teeth aren't as eager to deal out damage as they once were. sometimes i just want to cook something that doesn't fight me when it's ready to call itself a meal. something i can taste without feeling like i'm killing it twice. you know what i mean? 221104
