Observations from clearing land for the garden today: A kind of long grass in the backyard has surprisingly dry, smooth roots, sleek to the touch. Longer underground than aboveground. Regular grass and clover has disorganized lace for roots: a network of tiny threads. Easy to pull up, but hard to get the dirt out of. Dandelions have thick, greyish-white roots that gather a layer of brown dirt around, perhaps because they can be milky-sticky sometimes. Hard to pull up.
