i think the fact that eggs can be cajoled, caressed, combined, or cooked into many different forms are what makes them 'versatile' boiled (hard, soft) poached fried (hard, soft) scrambled omelet quiche crepe breads cookies cakes noodles/pastas the glue that holds loaves of many different ingredients together

( the use of the word caressed above may have been a stretch, but then again other french applications for eggs take a lot of timing and finesse i.e. souffle meringue looks like french cooking is a good example of 'versatile' and 'egg') has been a big foodie dork her whole life

hey_oren ever had beet horseradish with hard boiled eggs? it's an easter staple on the polish/ukranian side of my family. add some ham, and good paska with butter, some homemade macaroni salad and that's easter dinner at my grandpa's house. something about the texture of hard boiled eggs gags me a little. only if they are deviled, then i could eat a whole plate.
